During our November trip, Barbara and I had the pleasure of having dinner at C Le Restaurant, which was a wonderful and memorable experience. The restaurant is situated in a lovely plantation style open-walled building with pull down canvas shades that protect you from the wind or rain. Located several feet from the beach and the yachts at anchor in the Bay of Anse Marcel, we could see the twinkling lights of Anguilla in the distance. The dress code is casual and the décor, furniture and setting is contemporary Caribbean.

With soft music playing in the background, we sat there enjoying our apéritif and admiring the surroundings while Marie-Annette, the maitre d' hôtel, presented our meal to come and Mimi made suggestions on wines. During the evening, we shared good conversation and several laughs with these two charming ladies. As the evening progressed, we listened to the modulating soft waves lapping upon the shoreline, held hands across the table, smiled, laughed alot and, and, and... Let's get to the meal!

Appetizer: Served on a long, rectangular, black-slate, flat plate, adorning the four corners, were a hibiscus leaf with baked sugar, coconut shavings cut into a circle with decorative tomato skins on top, a "coulis" of passion fruit, and a very special "verrine" with chopped mango chutney. And in the center of this incredibly innovative dish were several slices of seared tuna on a plantain.

Entrée: A mouth-watering piece of filet mignon cooked to perfection, penne pasta in a white cream sauce with foie gras served in a red mini crock pot, side vegetables included carrots, sweet potatoes and snow peas. All extremely savorous!

Dessert: Black Forest cake like I have never tasted before, prepared in a solid, solid dark chocolate edible "carton" with whipped cream laid on a base of tasty, crunchy nuts. A marvellous finish to an outstanding dinner!

Barbara and I have dined at C Le Restaurant several times over the years and, on each and every occasion, Chef Brazier and his team have overwhelmed us. Of the many fine restaurants that St. Maarten/St. Martin has to offer, C Le Restaurant is one of the three best on the island.
